Oatmeal in a Mug

My next meal-in-a-mug experiment was oatmeal. I used this recipe for Baked Oatmeal in a Mug. You'll be amazed to hear that I actually followed the directions EXACTLY as written! (I'm shocked myself.) Here's how the oatmeal looked heading into the microwave:



This is how it looked 2 minutes later. Huh. That doesn't look at all like what I expected.


Maybe a quick stir and fluff will help? Yes, that makes all the difference. 


The taste. Delicious, despite the faint banana taste (I hate bananas). The texture wasn't quite like regular oatmeal, as it was a bit lighter and slightly spongy. That's due, I assume, to the ingredient on the list that you'd be least likely to expect in oatmeal, the egg.

The oatmeal was so good that I wanted to give it another go the following morning. But this time, I wanted to ditch the banana and replace it with a fruit I actually like - strawberries. While I was at it, I tinkered with the quantities of the other ingredients. Here's how it looked going into the microwave:


This is how it looked two minutes later. Oops. Time to wash the microwave again.


Next time I'll make sure I haven't chosen such a small mug when I make this. Despite the mess, it was delicious! Here's my recipe:

Strawberry Oatmeal in a Mug


  • 3 ripe strawberries, diced
  • 1 egg
  • 1/2 c. milk
  • 1 T. maple syrup
  • 1/2 tsp. cinnamon
  • 1/2 c. oats

Put the strawberries in a mug. (Don't choose your smallest mug.) Add the egg and beat with a fork. Mix in the milk and maple syrup. Stir in the cinnamon and the oats. Microwave for 2 minutes and fluff the oatmeal. If it is not completely cooked, return it to the microwave for up to 1 more minute.
