Peach Syrup

For my next experiment with Melissa's peaches and nectarines, I decided to make syrup.  Peach syrup is very easy and absolutely delicious. 

Roughly chop two UNPEELED peaches.  Put peaches chunks into a pan.  Heat on low, mashing with a potato masher. 


When peaches are very soft and offer no resistance, transfer to a fine mesh strainer.  Push peaches to extract all juice and pulp.  Add to pan and bring just to a boil.


Reduce heat to low.  Add 1/4 c. sugar and the juice of one lemon.  Stir until sugar is dissolved and syrup reaches desired consistency, approximately 3 minutes. 

The peels give the syrup a gorgeous pink color.

This syrup is delicious on pancakes and waffles, or poured over the tops of the Peach Muffins.
